Ingredients

    • 1 white onion, diced -
    • 2 jalapeños, diced -
    • 2 tbsp peanut oil -
    • 500g (1.1 lbs) beef mince -
    • salt and pepper, to taste -
    • 1 tbsp ground cumin -
    • 1 tbsp smoked paprika -
    • 1 tbsp garlic powder -
    • 2 tbsp tomato paste -
    • 1 tbsp Vegemite -
    • 500ml (17 fl oz) beef stock -
    • 1 tbsp hot honey -
    • 300g (10.5 oz) red Leicester cheese, grated -
    • 6 hot dogs -
    • 6 hot dog buns

Method

  1. To make the chilli, start by heating the peanut oil in a large frying pan over high heat for 1-2 minutes. Add the beef mince and season well with salt and pepper. Flatten the mince to form an even layer in the pan to brown for 3-4 minutes. Then, add 3/4 of the diced onion and diced jalapeños, stir well. Next, add the spices, tomato paste, beef stock, and honey. Cook for 25 minutes on low heat, stirring often.
  2. To cook the hot dogs, place them in a frying pan over medium-high heat. Once they start to colour slightly, pour around a quarter cup (60ml) of hot water into the pan and immediately cover with a lid to steam the hot dogs through.
  3. Once the hot dogs are cooked, add your hot dog buns and about 2 tbsp of water to the pan to steam them, heating them all the way through.
  4. To assemble, place a hot dog in each bun, top with chilli, grated cheese, and the remaining diced white onion.[[Category:hotdog]
